Notes
KetoChow is a nutritionally complete meal replacement shake or soup mix that is perfect for those of us with busy lives. You mix it up with your preferred fat source and amount to tailor it to your specific dietary needs.
This soup originated on the KetoChow website. It is pretty simple and straightforward. But I struggle to do things simplistically, or in any sort of straight line, so I made the soup my own.
Using the Vitamix blender’s soup function, this was super easy! The texture was rich and creamy with a heartiness that I prefer.
In the original recipe, you don’t blend everything to a consistent texture, but the Vitamix makes this process so fast that I didn’t mind not having bits of peppers in the soup. The color is a little less pumpkin-y though, so there’s that.
If you wanted to further reduce the carbs in this soup, you could easily swap half the pumpkin puree with cauliflower! And if you were interested in bumping up the protein, adding some cottage cheese to the blender would get you there.
