Low Carb Chocolate Pie That Is PSMF Friendly!

I love dessert! But sometimes on a low carb, low fat, high protein day (a.k.a. PSMF day or “lean” day) it can feel like a drag because desserts usually mean higher fat.  This Low Carb Chocolate Pie shakes up that thought and is friendly for those leaner days without sacrificing the feeling of indulgence! It’s nice to have something that is highly satisfying but doesn’t impede your goals. I would enjoy a slice of this pie on a lean day with a couple of raspberries.  But a fat spoonful of homemade whipped cream makes this pie phenomenal on those “regular” or “higher fat” days! So. Many. Egg Whites… Lean day…

    Keto Pumpkin Fudge

Keto Pumpkin Fudge Fall Candy for Keto Diet A chocolate free pumpkin pie “fudge” that’s keto friendly for the fall! I love candy! And now that Halloween has passed, there’s a lot of it around.  I’d rather not slip up and dive face first into the candy my kids have carefully arranged on the kitchen counter.  https://youtu.be/j6Tfoh5Dmns

    Keto Zuppa Tuscana

Keto Modification for Zuppa Tuscana Even though the temperatures where I live are still in the 70s, I’m calling it… It’s officially soup season!  Typically, I’m not much for soup. It’s hard to sink your teeth into something that you slurp. And I really like to chew food, unless I’m on the go, or am crunched for time. But soup isn’t really great for either of those situations either.  Regardless, it’s soup season and my family does love soups. We used to love the Zuppa Tuscana at Olive Garden when we’d have the “all you can eat salad, soup, and breadsticks” back in the day. And I will say, the…

Keto Banana Cake with Protein Frosting for 2

Keto Banana Cake Protein Frosting For 2 Keto Banana Cake Protein Frosting Some times you just want a small batch of something delicious. This keto friendly banana cake with frosting can fit that bill! Using the newest member of the KetoChow lineup, Banana Bread makes a yummy banana cake that takes me back to my childhood! When KetoChow released their new Banana Bread flavor, I was immediately reminded of my grandmother’s banana cake she would make us with a cream cheese frosting.   Having that whole cake hanging around would dissolve my resolve when trying to be reasonable with sweets and treats. It was so stinkin’ good!  Knowing myself, I…

    Peanut Butter Sandwich Cookies

I didn’t set out to create keto friendly peanut butter sandwich cookies, but that’s what happened. Peanut butter sandwich cookies were a treat we’d enjoy as kids. NutterButters were so enticing in that bright red package, promising all their pea-nutty goodness.  We’d snag a couple of them when mom wasn’t looking and scurry off, shoving the evidence into our mouths as fast as we could.  Clearly food issues were present from the start.  However, I found a way of eating that really suits me and allows me to enjoy the treats of yesteryear in a way that doesn’t cause my body to feel worse.  Originally, I was working on a…

Can We Make Quick Keto Cereal?

quick keto cereal Is there anything quite like that childhood memory of pouring a bowl of cereal and plopping down in front of the tv for some Saturday morning cartoons?  I can’t think of any.  I wasn’t ever the kid who went “coo-coo for Cocoa Puffs”, but I did love Cinnamon Toast Crunch and Apple Jacks. Dry, mind you… with a glass of milk on the side.  As I’ve gotten older, those nostalgic things have recaptured my heart. When you want a cereal crunch, there aren’t many things that will really satisfy that craving.  There are multiple brands of “Keto” cereal on the grocery store shelves, but they usually have…

How About A Nut-Free Keto Flour Substitute?

A NEW KETO PROTEIN FLOUR! In the keto world it’s rare to see a substitute for all purpose flour that is a nut-free keto flour. Usually, we use almond flour, coconut flour, flax meal, and a whole variety of fiber powders to attempt to recreate baked goods that we once enjoyed before embarking on a keto way of life.  I have my own low carb baking blend that I’ve used with tremendous success over the years. It’s fantastic for converting all my old recipes into keto friendly versions. And I still use my baking blend to this day! On a seemingly unrelated note, there is a phenomenon in the keto…

    Smothered Chicken Thighs

Smothered Chicken Thighs… what are we talking about here? The memories of having a big fancy dinner ring fondly in my mind’s eye. Growing up we’d have dinner at my grandparent’s house for some reason or another and my grandma would cook up a feast. Piles of delicious home-cookin’ would fill the dinner table and so would her pretty dishes.  I couldn’t tell you for certain that smothered chicken thighs was ever on the table on those nights, but I can say I’ve had it in countless other settings. It’s one of those meals that would’ve fit beautifully at grandma’s family meals.  Loaded with rice, mushrooms, and seared chicken, it…

The Classic “Funeral Potatoes” Get A Keto Upgrade!

Why does food this good have such a depressing name?  Well… I don’t have an answer for that.  Maybe it’s because when you go to the reception after a funeral everyone wants something comforting. Perhaps this casserole was made in honor of someone’s mama after she passed and it was a hit. Or what if someone made the name up as a joke, like “these potatoes are so good I just died and went to heaven”… *shrug* Whatever the case may be, I just know when I hear “Funeral Potatoes” I think a) yum and b) definitely NOT keto friendly. *boo* Sure there are Keto Funeral Potato replacement recipes out…

Have You Had Keto Old Fashioned Fudge?

Why keto old fashioned fudge? One of the things I heard often when I’d share I follow a Keto Lifestyle was “how did you give up candies and baked goods?”  It’s a solid question for those who aren’t aware of the huge variety of ingredients at our keto fingertips.  But the longer we’re following a keto diet, the more ingredient options we’re exposed to: almond flour, coconut flour, allulose, protein powders, acacia fiber, etc.  Armed with a pantry full of alternative flours, thickeners, and sweeteners, I was able to create just about anything my little heart desired. Pre-keto, one of my favorite things to eat was candy. I especially loved Christmas candy my mom would…
