    VERSATILE KETO MUFFINS

Muffins are a classic breakfast or snack option you can grab as you head out the door. Having a batch of muffins ready in the morning makes breakfast seem a little more special. They’re great for to make ahead to have all week long. And it’s easy for kids to make breakfast for themselves (mom win right there)! But the white flour and sugar makes them a big no-no on a keto friendly diet.  The high carb energy burns fast and leaves you tired, slumpy, and a little grumpy. Fortunately we can take many baked goods and convert them to keto friendly options! I played around with my baking blend…

When you shift to a keto friendly lifestyle, you have to put in a little leg work to replace those old standbys or you may derail your progress. So what about having a keto tortilla replacement? How often did you grab tortillas before going keto?  Tortillas are one of those pantry staples that we kept in our kitchen at all times.  Don’t know what to make for dinner? Tacos, fajitas, or wraps… dinner is done. Or when kids are squawking about being hungry… melt some cheese on a tortilla and make a cheese roll-up. But when you shift to a keto lifestyle, flour and corn tortillas are out of bounds.…

Whether you enjoy yours with a glass of milk or a cup of coffee, Snickerdoodles continue to delight cookie lovers of all ages. But, as someone who lives a keto friendly lifestyle, these classic cookies have been off the menu…until now! This Keto…

    SUGARLESS SIMPLE SYRUPS KETO FRIENDLY

In today’s fast-paced world, finding a moment of tranquility and indulgence can be a challenge.  There’s something undeniably special about treating yourself to a fancy coffee shop drink, whether it’s a frothy latte, a velvety cappuccino, or a decadent mocha. It’s a chance to escape the hustle and bustle of daily life, savor a delicious treat, and perhaps most importantly, to connect with a friend over a steaming cup of goodness. But let’s face it – as much as we love those indulgent coffee shop visits, they’re not always feasible. Between hectic schedules, tight budgets, and health-conscious choices, swinging by the local coffee shop drive-thru isn’t always the most practical…

KETO FRIENDLY SAUSAGE PANCAKE BREAKFAST SANDWICH

Breakfast is my Favorite! I love the classic eggs and bacon, creamy yogurt with keto cereal, and stacks of keto waffles!  But I also love breakfast to-go and today’s recipe is great for that! Ta-da! It’s my Keto Breakfast Sandwich!  In my pre-keto days, I loved the McDonald’s “McGriddles”… lightly sweet pancakes, sausage patty, and sometimes an egg with cheese… YUM. This recipe does take a little extra time to prepare, but it’s totally worth it! Be efficient when making this recipe! The key to this recipe is being efficient with your time. Get started by heating your frozen sausage patty on a skillet before anything else. This gives it…

These Low Carb Berry Snack Bars are a delicious treat for them that won’t cause those sugar monsters to pop out as the day progresses. HOW MUCH FAT AND PROTEIN?

“KETO DIET” synopsis: Eat Fat. Eat Protein. Limit Carbs. Seems like a simple concept. Cut out the crackers, chips, pastas, and potatoes. Check. Put MCT Oil Powder in coffee. Check. Eat all the bacon. Check.  But wait, how much protein? How much fat? Did I go over my carbs?!?! Everyone has different needs as it pertains to macronutrients (fat, protein, and carbohydrates). It’s easy to ask a variety of influencers what their macros are and decide to follow in lockstep with them. But the way one person eats may not be the way YOU need to eat. Instead of guessing what your body requires, try using a Macro Calculator. I like Perfect…

    STRAWBERRY CREAM SODA

You may know these as “Italian Sodas”, but it feels like pure American summer to me! I’ve had store bought strawberry cream soda in the past… in my pre-keto days. They were tasty, but nothing that truly “WOWed” me.  I typically preferred the classic Texan fizzy soft drink: Dr. Pepper. #TexasBorn However, I don’t purchase soft drinks any more. In fact, the husband and I haven’t regularly bought sodas during the entirety of our nearly 18 year marriage.  It’s not a cheap product and we usually were more focused on other ways to get high fructose corn syrup… like through cereals and other packaged sweets.  Once we switched to a…
