KETO FRIENDLY SAUSAGE PANCAKE BREAKFAST SANDWICH

Breakfast is my Favorite!

I love the classic eggs and bacon, creamy yogurt with keto cereal, and stacks of keto waffles

But I also love breakfast to-go and today’s recipe is great for that!

Ta-da!

It’s my Keto Breakfast Sandwich! 

In my pre-keto days, I loved the McDonald’s “McGriddles”… lightly sweet pancakes, sausage patty, and sometimes an egg with cheese… YUM.

This recipe does take a little extra time to prepare, but it’s totally worth it!

Be efficient when making this recipe!

The key to this recipe is being efficient with your time.

Get started by heating your frozen sausage patty on a skillet before anything else. This gives it plenty of time to get delicious and browned.

Next make the “pancakes”. It’s really a muffin in a mug that has a couple of extra steps on the back end. My baking blend gives the “pancakes” a fantastic texture, but feel free to use almond flour if that’s what you have on hand. 

If you’d like egg on your sandwich, get it on the skillet with the sausage after you start the “pancakes”. I like to use a little egg ring to keep the thickness and size uniform. Cooking the eggs over-hard makes this so much tidier when eating on the go… I don’t love yolk dripping down my chin if I’m eating this in the car!

Once the “pancakes” are done in the microwave, cutting them like you would a cake when making layered cakes will give you the right shape for the sandwich. Then getting the outsides crispy on the skillet, while also smashing them down, gives you 2 lovely “pancakes” that hold up to the filling.

Slices of cheese and a little squeeze of homemade mayo makes for the perfect finishing touches on this keto breakfast sandwich!

A few tips if you prep these sandwiches for later noshing:

  1. Leave the mayo off the sandwich until after you’ve reheated it.
  2. Let the sandwiches cool completely on a rack before refrigerating them.
  3. Wrap each sandwich in a piece of parchment paper and then store them all in an airtight container.
  4. I reheat the sandwiches in the parchment paper, in the microwave. Usually 60-90 seconds is sufficient.
  5. Keep the sandwich in the parchment wrapper if you’re eating this in the car…it’s much less messy!

SAUSAGE PANCAKE BREAKFAST SANDWICH

This single serve breakfast sandwich is reminiscent of the "McGriddle" you can find at a popular fast food chain but it's keto friendly!
Servings: 1 sandwich

Instructions

  • On medium-low heat, begin with cooking the frozen sausage patty on a skillet.
    1 frozen sausage patty
  • Melt the butter in a microwave safe mug. Use a larger flat bottomed mug that has a diameter similar to the sausage patty.
    1 tbsp butter
  • Mix the erythritol blend and salt into the melted butter.
    1 tbsp erythritol blend sweetener
  • Add your egg to the butter mixture and mix well.
    1 egg
  • Add the baking blend and baking powder to the mug. Mix very well.
    2 tbsp DIY Baking Blend
  • Scrape the sides down to ensure all the batter is off the sidewalls of the mug. Microwave the batter for 90 seconds, or until the batter is cooked through.
  • Run a knife around the mug to loosen the "muffin" from the mug. Turn the "muffin" out onto a plate or cutting board. Using a knife, cut the "muffin" in half to make 2 shorter circles.
  • Place the 2 halves of the "muffin" on your skillet, alongside the sausage. Using a flat spatula, smash down each half of the "muffin" into a pancake. Allow the pancakes to toast on both sides.
  • Once the pancakes are toasted to a color you find appetizing, stack up the sandwich: pancake, sausage, pancake.
  • Enjoy! If you use them, sugar-free syrups make a great addition to this breakfast sandwich.
    1 tbsp Sugar Free Syrup

OPTIONAL ADDITIONS

  • If you want to add to this sandwich, fry an egg in the skillet as you also cook the sausage (I use this little egg mold to keep it tidy: https://amzn.to/3PEHdHb). Add the sliced cheese as you stack up the sandwich and enjoy!
