Put 1 ½ cups water into blender. Add keto chow. Blend for a moment to incorporate.
Add tallow to blender. Blend.
While blender is running, heat bloomed gelatin in microwave for about 30 seconds, or until liquid.
With blender running on low, slowly stream activated gelatin into pudding base.
Blend until the pudding is a uniform color.
Pour into container with a lid and put into fridge for several hours, up to overnight, for pudding to set.
Once set, you can serve as it is, or you can use an immersion blender to make the texture more like a cooked pudding.
