How to Make Fluffy Pancakes

Fluffy pancakes on THM can be somewhat illusive.

While I prefer eggs and greens in the morning, somedays I just really want some fluffy pancakes. To date, I’ve been pretty disappointed with how flat most THM friendly pancake recipes fall.

After a bit of workshopping some ideas, I’ve come up with this recipe! The best part (I believe) is that it’s flexible on fuel types and I could find everything at my local Walmart, except the whey protein. But even then, there were some whey isolate options there that could’ve worked!

Fluffy Banana Pancakes

Most alternative pancake recipes fall flat. These pancakes stand up to the pressure of being like white flour pancakes without a speck of flour to support them!

Ingredients

  • 1/2 cup egg whites
  • 1/4 tsp xanthan gum
  • 1/2 medium banana
  • 2 tbsp whey protein isolate powder unflavored, unsweetened
  • 1/4 tsp baking powder

Instructions

  • In a bowl, pour the egg whites and sprinkle xanthan gum on top. Whip egg whites into stiff peaks (THIS IS KEY!)
  • In another bowl, mash the banana, protein powder, and baking powder to make a well incorporated goo. (I like to use my immersion blender for this)
  • Gently fold (or whip) the banana mixture into the egg whites mixture.
  • Heat skillet on LOW. Spray lightly with coconut oil spray. Scoop pancake mixture onto skillet and let it cook. This will take some time.
  • When the tops of the pancakes look less wet, flip them to finish cooking. 
  • Serve HOT with your favorite sugar-free, THM friendly syrup!

Notes

  • Making sure the egg whites are at stiff peaks is very important to these pancakes having lots of fluff. Don’t skimp on this step.
  • These pancakes take a LONG time to cook – think 10-12 minutes per side. This is why keeping the skillet low is important. If these aren’t cooked low enough, you’ll burn the outsides but have a gooey center… not desirable!
  • These pancakes have a marshmallow-y texture (which I LOVE!) so it might not be exactly what you’re expecting when you first bite into them.
  • These pancakes will deflate some as they cool. I find they’re still fluffier than other THM pancake recipes I’ve tried. Your mileage may vary.
