The Classic “Funeral Potatoes” Get A Keto Upgrade!
Why does food this good have such a depressing name?
Well… I don’t have an answer for that.
Maybe it’s because when you go to the reception after a funeral everyone wants something comforting. Perhaps this casserole was made in honor of someone’s mama after she passed and it was a hit. Or what if someone made the name up as a joke, like “these potatoes are so good I just died and went to heaven”… *shrug*
Whatever the case may be, I just know when I hear “Funeral Potatoes” I think a) yum and b) definitely NOT keto friendly. *boo*
Sure there are Keto Funeral Potato replacement recipes out there in the internets.
It’s pretty simple to swap those potato hash browns with some cauliflower florets. And cheese and sour cream are always staples on the keto diet. We can easily exchange the cornflake topping with crushed up pork rinds.
But what the keto versions lack is that undeniable potato flavor!

What all do we need?
The KetoChow really makes this recipe. But if you can’t get your hands on it, there are flavor oils on the market you can use.
It takes only a couple of drops at most to achieve the flavor with those concentrated oils, so take it easy at first and add more if you need to. You’ll also want to add a serving of unflavored, keto friendly protein powder to help the texture be just right.
Gelatin may seem like an odd ingredient, but it really helps the sauce to be the perfect thickness.
Everything else you can find in your grocery store: frozen cauliflower, sour cream, cheese, butter, and pork rinds.
Let’s get to building these Keto Funeral Potatoes! (Or are they “Faux-TaToes”!)
Keto "Funeral Potatoes"
Ingredients
Casserole
- 1 serving KetoChow Baked Potato
- 14 oz water divided (2oz cool water, 12 oz warm water)
- 1 tsp gelatin
- 1 cup sour cream
- 24 oz frozen cauliflower florets
- 2 TBSP melted butter
- 1 cup shredded colby jack cheese
Crunchy Topping
- 1-2 cups crushed pork rinds
- ¼ cup melted butter
Instructions
Casserole
- In a blender bottle, bloom the gelatin in 2 oz cool water for 3-5 minutes.
- Add KetoChow Baked Potato and 12oz warm water to blender bottle and shake well. Allow KetoChow to set for 30 minutes to overnight.
- Preheat oven to 350℉.
- Add sour cream (alternatively, you could use blended cottage cheese or plain greek yogurt) to the blender bottle and mix well.
- In a large mixing bowl, pour frozen cauliflower florets. If the pieces are large, cut them down to small bitesized pieces first. Add shredded cheese to the bowl.
- Pour ½ of the KetoChow/sour cream mixture and the melted butter to the bowl. Gently begin coating the cauliflower with the cream mixture.
- Add remaining cream mixture to bowl and coat cauliflower evenly.
- Pour casserole mixture into a 9x13 casserole dish.
Crunchy Topping
- Evenly sprinkle pork rind crumbs over the top of the casserole.
- Evenly pour the melted butter over the crumbs.
- Bake casserole at 350℉ for 45 minutes.
- Check casserole, rotate 180°, and continue baking for another 30-45 minutes (or until center of casserole is set and no longer moves).
- ENJOY! Serve up to a crowd as a side dish OR add some chopped chicken and bacon for an all-in-one casserole for dinner.
