SINGLE SERVE CHOCOLATE CHIP COOKIE MASTER MIX

Who doesn’t love a warm goody single serve chocolate chip cookie!

I love whipping up a sweet little treat at the end of the day as a dessert to enjoy while relaxing with my husband. It’s even better that I make single serve desserts so that I’m not doing what I call “fly-bys” all day long. Those can get me in trouble fast! So I see tremendous value in having just one of something to close out my eating window. 

But I do get a little irritated with how long it can take to get out all the different ingredients, measure each one out, and then clean it up while my treat is in the microwave or air fryer… I’d rather spend that time whipping up some whipped cream!

Single Serve Chocolate Chip Cookie Master Mix to the rescue!

Admittedly, the name is pretty wordy… but on the jar I typically write “Cookie Master Mix” or something to that effect. 

This is so great to have pre-mixed and on hand for those evenings when I want that sweet dessert but am exhausted and ready to plop down in front of the tv. I also like how versatile it is: swap the chocolate chips with some sugar free sprinkles and add a little almond extract for a cake batter mug cake, add some cocoa powder to make it chocolate, or choose a fruity flavor extract and make a single serve fruity dessert!

Such a basic cookie master mix recipe with countless variations!

The mix ingredients are few but effective. 

My baking blend has a fantastic ratio of keto friendly flour substitutes and binders that give the final cookie a fantastic texture. I make up a couple of batches of this blend and keep it in my pantry. We use this all the time!

Erythritol is a good low carb sweetener alternative that adds to the bulk of this recipe. If you wanted to swap allulose in its place, that’d work well too! Allulose is a great low carb sweetener that works the most like regular table sugar without having all the drawbacks!

Stevia powder will help that erythritol or allulose to reach the same level of sweetness you’d get from regular sugar without impacting the ratios in the mix. 

Change up the flavors by adding in different flavor extracts, adding keto sprinkles, or a couple of chopped up frozen berries!

Store this in an air tight jar and make sure to label it so it doesn’t get lost in the back of the pantry!

KETO MASTER COOKIE MIX

I love keeping this master mix around for those times when a sweet craving hits! By only making a single cookie (or double it to share) you can be satisfied without going overboard.

Ingredients

MASTER MIX

SINGLE COOKIE

  • 1 Egg Yolk
  • 1 TBSP Butter Softened
  • 4 TBSP Master Mix
  • 1 TBSP Stevia Sweetened Chocolate Chips

Instructions

MASTER MIX

  • Combine all ingredients, in a large bowl or storage container, using a whisk until the ingredients are distributed evenly.

SINGLE COOKIE

  • In a small microwaveable dish, cream the egg yolk with the butter until they’re a pale yellow with a fork.
  • Mix the Master Mix into the creamed butter/egg until it becomes a dough consistency.
  • Evenly distribute the chocolate chips and mix into the dough, pressing them in firmly.
  • Microwave the cookie for 45-60 seconds.
  • Enjoy your cookie!

Notes

*These cookies are best when they’re still a bit soft. Don’t let them overcook in the microwave.
 
** Adjust your time as needed and consider your microwave’s wattage.
