LOW CARB SANDWICH BREAD 1g NET CARB!
This is a super low carb bread that's tasty as a sandwich, toast, or just on it's own!

Ingredients
- 2 cups Liquid Egg Whites
- 1 tsp Xanthan Gum
- 1 1/4 cups Plain Greek Yogurt (I use my homemade recipe)
- 1/2 cup Whey Protein Isolate
- 1/2 cup DIY Baking Blend (I have a video on this recipe)
- 1 cup Oat Fiber
- 1 tbsp Baking Powder
- 1 tsp DIY Sweet Blend (or store bought sweetener like Pyure)
- 1/2 tsp Salt
Instructions
- Preheat oven to 350F. Prepare a loaf pan (I use a 13" Pullman pan for this - a 9" pan will be too small so you'll need to divide the batter between 2 pans if using a standard loaf pan) with parchment paper, but don't grease it.
- In a large mixing bowl, beat EGG WHITES with XANTHAN GUM, using a hand mixer, stand mixer, immersion blender, or by hand, until they form stiff peaks.
- Measure the rest of the ingredients into the stiff egg whites and mix well.
- Scrape the bread batter into the prepared loaf pan, being sure to smooth the top.
- Slide the pan into the oven and bake for 50-60 minutes, being sure to check and turn the pan every 15-20 minutes to ensure even baking.
- Once done (no wet batter on an inserted toothpick), remove bread from pan by the parchment paper. Allow to cool on a rack, turning it over a few times to ensure no "cave ins".
- After bread is completely cooled, slice into 20 pieces and use in place of regular "loaf" bread!
