Why does food this good have such a depressing name?  Well… I don’t have an answer for that.  Maybe it’s because when you go to the reception after a funeral everyone wants something comforting. Perhaps this casserole was made in honor of someone’s mama after she passed and it was a hit. Or what if someone made the name up as a joke, like “these potatoes are so good I just died and went to heaven”… *shrug* Whatever the case may be, I just know when I hear “Funeral Potatoes” I think a) yum and b) definitely NOT keto friendly. *boo* Sure there are Keto Funeral Potato replacement recipes out…
