FREEZER FRIENDLY CHICKEN PATTIES
Freezer Friendly Chicken Patties
These LOW CARB chicken patties are a perfect freezer food to prep and keep on hand for days when you need to pull lunch or dinner together quickly. These are kid-friendly as well!

Equipment
- OPTIONAL: Air Fryer
Ingredients
- 1.5 – 2 lbs ground chicken
- 1 medium zucchini
- 2 medium carrots
- ¼ medium onion
- 1 cup DIY Baking Blend divided
- ½ tsp salt
- ¼ tsp pepper
- sprinkle onion powder
- sprinkle garlic powder
- 1 egg
Instructions
- Preheat the oven to 350F.
- In a large bowl, place the chicken, seasonings, ½ cup of baking blend, and egg.
- Peel the carrots. Grate the carrots and zucchini. Finely dice the onion.
- Add vegetables to the bowl. Mix well.
- In a shallow dish, place the other ½ cup of baking blend.
- Using a medium sized cookie scoop (approx. 3 TBSP), scoop some of the mixture into the baking blend.
- Roll the mixture in the baking blend and then shape into a patty. Place on parchment paper.
- Once the patties are formed, slide the parchment onto a baking sheet or baking rack.
- Bake in oven for 15 minutes. Flip the patties over. Bake for another 15 minutes.
- Once patties are fully cooked, spray lightly with olive oil spray. Place under the broiler for a few minutes (BE CAUTIOUS! These will burn quickly!) to brown and crisp the outside.
- Serve as a chicken sandwich, cut up into a salad, or on their own with dipping sauces!
IF USING AIR FRYER
- Follow same preparations for patty mixture.
- Preheat Air Fryer to 350F.
- Place patties in a single layer inside the air fryer basket. Fry at 350F for 12 minutes.
- Check the patties and flip them over. Spray lightly with some olive oil spray. Continue air frying for another 3-5 minutes, or until the patties are browned to your liking.
